Christmas Ideas

It has been a busy couple of months. In October, I had all these great ideas of what I wanted to accomplish for the Holiday's. I didn't expect to be in the hospital on bed rest, or have a baby so premature. So, I have no time now as I'm drowning in laundry, diapers, dishes. I still dream of the fun ideas.
After some searching around, I would still like to share some of the projects that were on the list.

Homemade Gift
Hot Cocoa in a Jar

I Love things in a jar, especially as gifts. Here is a unique recipe I found for Mexican Hot Cocoa!

That's a few of the many images swimming in my head as I clean the house, make another bottle, change another diaper or peel another apple. Maybe I will get to these next year?

Chocolate Eclair cake


Hubby's Birthday is on Monday and we are celebrating today! I made this very easy Chocolate Eclair Cake, AKA Ice box cake. I love this cake and it is so easy to make.
 Yum!!!

What you need....
1 box of graham crackers
2 boxes of instant french vanilla pudding
3 1/2 cups milk
1 8oz frozen whipped topping thawed
1 16oz chocolate frosting

What you do...
Line a dish (13 x 9 x 2 in) with butter and layer with graham cracker sheets. In a mixing bowl on medium speed, blend together the milk and french vanilla pudding mix for 2 minutes.

Next, fold in the whipped topping. Take half of your mixture and spread over the first layer of graham crackers. Place another layer of graham crackers on top of pudding mixture. Pour the remaining mixture on top of the second layer of crackers. Put a third and final layer of crackers on top.

Heat the chocolate frosting in a microwave safe dish for one minute, stopping half way through to stir.
Top evenly with the melted chocolate frosting.

Chill over night for 24 hours.
